Thai Green Chicken Curry

  • Ingredients

  • 2 to 3 tablespoons coconut oil, olive oil may be substituted
  • 1 medium/large sweet Vidalia or yellow onion, diced small
  • 1 to 1.25 pounds boneless skinless chicken breast, diced into bite-sized pieces
  • 3 cloves garlic, finely minced or pressed
  • 2 to 3 teaspoons ground ginger or 1 tablespoon fresh ginger, finely chopped
  • 2 teaspoons ground coriander
  • one 14-ounce can coconut milk, use full-fat for a richer/thicker result but lite may be substituted
  • 1 to 1 ½ cups shredded carrots
  • 1 large zucchini, diced into bite-sized pieces
  • 2 to 8 tablespoons Thai green curry paste, or to taste (I used the whole jar for this recipe, but prefer bolder flavors)
  • 1 teaspoon kosher salt, or to taste
  • ½ teaspoon freshly ground black pepper, or to taste
  • 1 to 2 tablespoons lime juice
  • ¼ to ⅓ cup fresh cilantro or to taste, finely chopped for garnishing (basil may be substituted)
  • 1 to 2 tablespoons granulated sugar, optional and to taste
  • rice, jasmine or basmati or naan, optional for serving

Instructions

  • To a large skillet, add the oil, onion, and sauté over medium-high heat until the onion begins to soften about 5 minutes; stir intermittently.
  • Add the chicken and cook for about 5 minutes, or until chicken is done; flip and stir often to ensure even cooking.
  • Add the garlic, ginger, coriander, and cook for about 1 minute, or until fragrant; stir frequently.
  • Add the coconut milk, carrots, zucchini, Thai curry paste, salt, pepper, and stir to combine. Reduce the heat to medium, and allow mixture to gently boil for about 5 minutes, or until liquid volume has reduced as much as desired and thickens slightly.
  • Add the lime juice, cilantro, and stir to combine. Taste and optionally add sugar, additional curry paste, salt, pepper, etc. to taste.

Easy Chicken Chow Main

Ingredients:
• 2 packages ramen noodles
• 1 tsp olive oil (or sesame oil)
• 1/2 lb chicken breast, sliced
• Season with 1/2 tsp salt, 1/2 tsp pepper, 1 tsp paprika
• Squeeze of half a lemon
• 3 cups chopped cabbage
• 1 cup shredded carrots
• 1 cup chopped onions (any kind, I used green)

• 1/4 cup low sodium soy sauce
• 1 tbsp minced garlic
• 1 tbsp minced ginger
• 1 tbsp honey (or brown sugar)
• optional topping: red pepper flakes
-
Notes:
• For noodles, if you can find yakisoba or soba noodles, they are a great option! Otherwise, any kind works! It’s all about having it in moderation.
• Edamame, red peppers, green beans, broccoli are a few of the many veggies you could also use as a substitute or add-on!
• If you want to lower the calories and increase the volume even further you can add more cabbage and less noodles! You can also replace the honey/brown sugar with any low calorie sweetener!

Cook noodles and drain.  Brown chicken with spices and lemon for 5 mins.  Remove chicken.  Cook cabbage, carrots, onions, celery.  Add soy sauce, garlic, ginger, honey, red pepper.  Add noodles and chicken and serve.

Chicken Yakisoba

INGREDIENTS

  • 1/2 head green cabbage ($0.41)
  • 1 medium yellow onion ($0.55)
  • 2 medium carrots ($0.25)
  • 1 small crown broccoli ($0.70)
  • 1 inch fresh ginger ($0.52)
  • 1 large chicken breast ($1.66)
  • 2 Tbsp vegetable oil ($0.08)
  • 2 3 oz. packages ramen noodles, seasoning packets discarded ($0.50)
  • 1 tsp sesame oil, optional ($0.19)
  • 1/4 cup soy sauce ($0.24)
  • 1/4 cup worcestershire sauce ($0.20)
  • 2 Tbsp ketchup ($0.05)
  • up to 1 Tbsp sriracha hot sauce ($0.26)
  • 1 Tbsp sugar ($0.02)

INSTRUCTIONS

  • Before you begin, prepare the meat and vegetables for stir frying. Peel the ginger with either a vegetable peeler or the side of a spoon and then grate it with a cheese grater. Peel and grate the carrots with a large holed cheese grater. Remove the core from the cabbage and cut into thin strips. Slice the onion into thin strips. Cut the broccoli into bite-sized pieces. Slice the chicken into thin strips.
  • Begin boiling a medium pot full of water for the noodles. Heat the vegetable oil in a large skillet over medium-high heat. When the oil is hot, add the grated ginger, saute for about 30 seconds to one minute (its okay if it sticks to the pan but don’t let it burn). Add the chicken strips and cook until they are no longer pink (about five minutes).
  • Once the chicken is cooked through, add all of the vegetables. Stir and cook until wilted (about 5-10 minutes). Meanwhile, once the water boils, add the noodles and cook just until tender (2-3 minutes). Drain, return to the pot (with the heat turned off) and toss with the sesame oil to keep from sticking.
  • In a small bowl, combine the soy sauce, worcestershire sauce, ketchup, sriracha, and sugar. Use only 1/2 tsp of sriracha if you don’t want it spicy, use up to 1 Tbsp if you like it hot. Stir until the ketchup and sugar are dissolved. Pour the sauce into the skillet with the chicken and vegetables with the heat still on medium high. Add the noodles, stir to coat everything in the sauce, and heat through (just a few minutes).
