Guacamole Salad

-1 pint grape tomatoes, (halved)
-1 yellow pepper (diced)
-1 (15 oz) can black beans (rinsed and drained)
-1/2 cup diced red onion
-2 Tbls. minced jalapeno pepper
-1/2 tsp. lime zest

Place above in a large bowl.

Dressing:
-1/4 cup fresh lime juice
-1/4 cup olive oil
-1 tsp. salt
-1/2 tsp. pepper
-1/2 tsp. minced garlic
-1/4 tsp. cayenne pepper

Whisk together, pour over vegetables and toss well.

-2 ripe avocados (DICED)

Just before serving, fold the avacados into the salad. Serve at room temperature.
